Small home made baskets are the sweetest thing to get in my opinion. Small little thought out items or freshly baked goods can be a grand gesture even in its small size.</div>

Who doesn't need a hot bowl of comforting soup on a day like today? It was quite the cold one. Although I can't complain we've been having some pretty mild temperatures as of late. <br />

Besides this salad, my current obsession is roasted rice green tea. Have you guys tried it? Ahh, I don't think I can go back to regular green tea again.<br />
<br />
<b>Roasted Veg Quinoa Salad</b><br />
<br />
<i>1 1/2 cups quinoa</i><br />
<i>1 medium - large egg plant, diced</i><br />
<i>2-3 ears of corn</i><br />
<i>1 large onion, cut into thin strips</i><br />
<i>1 bell pepper, diced</i><br />
<i>1 pint mini vine tomatoes</i><br />
<i>1/2 cup chopped cilantro</i><br />
<i>1 large handful of baby kale</i><br />
<i>juice of half a lime</i><br />
<i>2 tbsp olive oil</i><br />
<i>pea shoots for garnish</i><br />
<br />
<b>Roasted Garlic Tahini</b><br />
<br />
<i>2 cloves garlic, roasted</i><br />
<i>juice of half a lemon</i><br />
<i>4 tbsp tahini paste</i><br />
<i>1/4 water (more or less until you reach a somewhat loose consistency)</i><br />
<i>salt and pepper to taste</i><br />
<i><br /></i>
<b>Salsa</b><br />
<br />
<i>4-5 large tomatoes</i><br />
<i>1 shallot</i><br />
<i>1 clove garlic</i><br />
<i>1 cup cilantro</i><br />
<i>juice of 1 lime</i><br />
<i>1 tbsp olive oil</i><br />
<i>1 tbsp apple cider vinegar</i><br />
<i>salt and pepper to taste</i><br />
<br />
Preheat the oven to 350° F.<br />
<br />
In a pot cook the quinoa according to the package instructions. Place the onion, egg plant, bell pepper and 2-3 cloves of garlic (skins on, for tahini dressing) on a baking tray and pour the olive oil over and using your hands make sure all the veggies are coated. Roast in the oven for approx 10-15 minutes or until golden and soft.<br />
<br />
Place the corn on a microwave safe plate, cover with plastic wrap (this will steam the corn so make sure the plastic is wrapped to the plate tight) in the microwave for about 6 minutes on high. Let cool slightly as they will be quite hot. Add corn to a grilled pan until you get a few grill marks. (Corn can also be grilled over the bbq only forgetting the whole microwave process.<br />
Once cooled. Run a sharp knife, using a sawing motion, along the ear of corn about two-thirds depth of the kernels. Continue all around until all the corn is removed.<br />
<br />
In a food processor add all the ingredients for the salsa and pulse until everything is chopped up and you are only left with small chunks. Check seasoning.<br />
<br />
Mix all the ingredients for tahini dressing (also adding the roasted garlic, chopped) until you get a smooth creamy yet runny texture. You want to be able to drizzle it over the salad. <br />
<br />
In a large bowl mix together the quinoa, roasted veg, chopped cilantro, tomatoes, baby kale and lime juice. Drizzle with the tahini dressing and garnish with sprouts. When hot weather hits and turning on the oven is something I definitely don't want to do (no air conditioner in this abode). Having leftovers makes for a quick and easy refreshing lunch.<br />
We've been trying to eat healthier lately and to make a lifestyle change to keep it that way. Having a winter of eating out too much has made my man and I feel kinda well, blah.<br />
Juicing, smoothies and more trips to the market for tons of fruits and veggies is what we're aiming for this spring/summer.<br />

Its that time of year!<br />
<br />
Holiday parties, baking, gift giving, wrapping, tree trimming, hot cocoa, snowy late night walks and yule tide tunes. <br />
<br />
These are just a few of my favourite things about this time of year and a holiday dinner of course. This year I tried to switch things up a bit and try something a little different. No turkey and non-traditional sides with an asian twist.<br />
<br />
Outcome?<br />
<br />
Exceptional.<br />
<br />
It was refreshing, especially since there's usually still two or three more holiday dinners I'll be attending serving the good ol' classics and its nice for a bit of change.<br />

We had a big dumping of snow yesterday. Like lots. Not Boston like lots but enough where tredging to work in not quite adequate boots made for one not so pleasant trip. Especially when working a fifteen hour day only to put your boots back on to go home and realize they're still wet.<br />
<br />
Yep. Gross.<br />
<br />
I learned my lesson.<br />
<br />
Today I unboxed my storm troopers aka waterproof boots and I am not looking back. Not ever.<br />
<br />
So what does this have to do with soup? Lots, because there is nothing better then the combo of snowy days and hot bowls of homemade soup to keep you cozy. Even when you walked with wet socks for forty minutes.<br />

<i>2 tbsp olive oil<o:p></o:p></i></div>

<i>3 cloves garlic<o:p></o:p></i></div>

<i>1 ½ tsp curry powder<o:p></o:p></i></div>

<i>½ tsp turmeric<o:p></o:p></i></div>

<i>1 tsp smoked paprika<o:p></o:p></i></div>

<i>200 g roasted chestnuts peeled and chopped (or chestnut

<i>1 tsp fresh thyme plus extra for sprinkling <o:p></o:p></i></div>

<i>5 cups vegetable or chicken stock<o:p></o:p></i></div>

Preheat the oven to 400°<o:p></o:p></div>

Cut a ‘X’ into the chestnuts with a small serrated knife,
making sure to slice deep enough past the shell.<span style="mso-spacerun: yes;"> </span>Place on a baking tray and roast in the oven
for 15-20mins. The ‘x’ in the chestnuts should start to open and peel back
slightly.<span style="mso-spacerun: yes;"> </span>Let cool slightly, peel the
shells off and chop roughly.<o:p></o:p></div>

In a large saucepan on medium heat, add the olive oil, leeks
and garlic. Cook until fragrant and the leeks have softened. Add the carrots
and cook for another 5 minutes. Add the chestnuts, spices, thyme and
stock. Cook for 20 minutes until the
carrots are nice and soft. Blend in a
blender or hand blender until smooth.
Add the milk and place back on the heat until piping hot. <o:p></o:p></div>

With winter so closely heading this way, cold nights already in play and sunlight sadly disappearing by five o'clock. I myself am having a little bit of a hard time with it getting dark so early. Oh I'll get use to it for sure. Its just right now when I'm going to work in the dark and then coming home in the dark... Its a little depressing. Especially when going home on a cold and rainy evening and you just can't beat the chill even long after you've come home had a big ol' mug of hot tea and equipped yourself with your favourite cozy knit socks. Sometimes a hot bowl of stew is the only thing that will do. <br />
<br />
I used a sausage that was a little on the spicy side which gives the stew a nice kick and really warms the innards and a hearty flavourful beer that was the perfect combo for this 'Oktoberfest' style stew I found at the local LCBO.<br />
<br />
<br />
SMOKED SAUSAGE, POTATO AND KALE STEW<br />
serves 4-6<br />
<br />
<i>1 tbsp olive oil</i><br />
<i>2 smoked andouille sausages sliced into bite-sized rounds</i><br />
<i>2 small onions, halved then sliced thinly</i><br />
<i>1 carrot, diced</i><br />
<i>4 cloves garlic, minced</i><br />
<i>1/2 of a medium size savoy cabbage sliced into thin strips</i><br />
<i>1 (355ml) bottle of Samuel Adams 'Octoberfest' beer</i><br />
<i>1 1/2 tbsp apple cider vinegar</i><br />
<i>1 bag of small new potatoes, quartered</i><br />
<i>4 1/2 cups chicken stock</i><br />
<i>1 tsp dried dill (or fresh)</i><br />
<i>1 bay leaf</i><br />
<i>1 big handful of baby kale</i><br />
<i>salt and pepper to taste</i><br />
<i>chopped parsley for garnish</i><br />
<br />
In a large pot over medium high heat add the olive oil then sliced smoked sausage. Cook for 5-6 minutes until they begin to caramelize. Once the sausage has browned add in your onions and carrots and cook for another few minutes. Add the cabbage and garlic and stir to combine. Add in your beer and vinegar and cook off for 3-4 minutes. Add in your potatoes, stock, kale and spices and stir well. Allow to come to a boil then reduce the heat to low, cover your pot with a lid and simmer for 35-45 minutes until your potatoes are nice and soft. Adjust seasoning if needed.<br />

Who else isn't saddened by the end of summer? The days of longer sunshine, warm breezes and flip-flops is quickly coming to an end. I'm not sure I'm exactly ready for that yet. Nope not at all.<br />
So to hang on to that last little bit of summer days here's a sunny summery smoothie you can enjoy for those few hot days we have left.<br />

Cookies and cream is one of the first milk shakes I've ever tried. I remember standing in my Aunt's kitchen when she made me one and I couldn't believe that I had never seen or thought of this before. I was quite young and totally blown away by the goodness that was coming to me. But now being older and looking for a somewhat healthier and lactose free version I came up with this hack that doesn't sacrifice flavour.<br />

Celebrate Father's day with giving Dad a comforting hearty dish of Shepherds pie (my Dad's particular favourite) made with Guinness and a creamy-cheesy green onion and bacon mashed potato top.<br />
I have collaborated again with Natrel to come up with something delicious just for Dad. Tomato soup seems to conjure up days spent stuck in the rain. The anticipation of getting home to get cozy, dry and curl up with a hot bowl of soup was one that always brought upon a smile. Tomato soup was always my first choice and my Grandma made a mean one. This recipe is my twist on the classic favourite.<br />

I have not made fresh bread in probably well over three years. Ouch, thats a bit too long, especially for one bread lovin' gal like me. I could live on that stuff if I let myself, although I'd probably add quite a few unwanted pounds in the process. I just had one of those moments when I thought, you know what? I'm gonna make some bread. This was simply the easiest and tastiest bread I think I've ever made and there's nothing better then that wonderful simple joy that comes after you know you've just made your own bread.<br />

bacon and butter beans<br />
<span style="font-size: x-small;">(<i>serves 4</i>)</span><br />

2-4 slices bacon, chopped<br />
2 tomatoes, chopped<br />
1 can butter beans<br />
1 handful of baby kale<br />
salt and pepper to taste<br />
<br />
In a skillet cook the chopped bacon until crisp. Add the tomatoes and cook for a couple of minutes. Pour in the can of butter bean, juices and all (this is what makes a wonderful sauce) bring it to a simmer. Add the kale and stir through until wilted. Taste for seasoning. Add a slice of fresh bread for soaking up the juices and you've got a sweet side or little hearty snack.<br />

<span style="font-family: 'AmericanTypewriter'; font-size: 12.000000pt;">Preheat the oven to 300 F. Coat the sliced radish with the olive oil. Line a
baking sheet with parchment paper and lay out the sliced radish and
sprinkle with salt and pepper. Bake for 30-40 minutes, turning tray half-
way through, until crispy.

<span style="font-family: 'AmericanTypewriter'; font-size: 12.000000pt;">Meanwhile in a small bowl combine all ingredients for the dressing, whisk
and set aside.

<span style="font-family: 'AmericanTypewriter'; font-size: 12.000000pt;">In a deep saucepan, combine milk and water. Bring to boil over medium
heat. Stir in quinoa. Reduce heat to low, cover and simmer for 20 minutes.
Let stand covered 5 minutes. Transfer to bowl and let cool. Stir in apples,
cranberries, edamame and the sesame dressing and top with the basil,
scallions and radish chips. Serves 4-6. </span><br />

We had heard about this Christmas market and were pretty crazy excited to check it out. I mean come on its an outdoor market in an already beautiful place adorned with holiday festiveness, cedar log roaring fire pits to keep hands toasty warm, mulled wine, apple cider and hot chocolate to warm the innards, fresh baked pretzels, cute little snack huts, homemade christmas gift huts and even Santa himself. We then stopped at the Brick Street Bakery for a 'boxing day' sandwich. A sandwich loaded with what would be all the left over goodness of a christmas day feast. Which we need to get again. <li style="font-size: 12px; margin: 0px;">Place a strainer over a large bowl. Set aside.</li>
<li style="font-size: 12px; margin: 0px;">In a metal bowl, beat the egg yolks with half of the sugar. Add the flour and cornstarch and beat until smooth. Set aside.</li>
<li style="font-size: 12px; margin: 0px;">In a saucepan, mix the chocolate milk and the rest of the sugar. Bring to a boil, then remove from heat.</li>
<li style="font-size: 12px; margin: 0px;">Pour half of the warm milk mixture over the egg yolks and whisk. Pour into the saucepan.</li>
<li style="font-size: 12px; margin: 0px;">Put the saucepan back on the stovetop and bring the mixture to a boil. Let boil for a minute, stirring constantly. Make sure not to let the mixture stick to the bottom of the pan.</li>
<li style="font-size: 12px; margin: 0px;">Immediately strain the mixture into the large bowl.</li>
<li style="font-size: 12px; margin: 0px;">To avoid the formation of a skin on the top of the cream, lay plastic wrap over the warm cream. Refrigerate for three hours or until cool. </li>
<li style="font-size: 12px; margin: 0px;">Right before serving, whisk the cream vigorously. Pour into custard cups or prebaked miniature tart shells and top with berries.</li>

Who doesn't love a good pancake? Pancakes are one of those morning breakfast foods conserved for special days... lazy Sundays, cheering up days, kids treat days, Christmas morning or just days you plainly feel like good ol' pancakes. This day though is Christmas day. I enjoy doing special breakfasts on that very day. Considering I know there is a big meal a head of us later that evening, lunch will probably be skipped due to the Christmas day busyness so a good breakfast is key. Add some bacon or slow cooked scrambled eggs and this morning meal is more then complete.<br />

I have been a collaborator with <a href="http://www.natrel.ca/">Natrel</a> coming up with recipes using their milk products. So I bring you a little healthier lactose-free version of the pancake that might just be perfect for any of your special days.<br />

combined. Let rest for a few minutes.

cooking spray. Pour spoonfuls of batter into the pan in circles then turn the heat
to medium-low. Cook until the topside of the pancake starts showing tiny bubbles,
then flip and cook for another minute.

In a mortar and pestle combine banana chips and nuts and bash until you get a
good mix of broken up chips and crumbled nuts. Sprinkle over pancakes and top
with good quality maple syrup.
